Lavate accuratamente tutti i pesci. Eliminate gli occhi e il becco dal polpo e battetelo con un batticarne per ammorbidirlo. Estraete le interiora dalla sacca. Tagliate i singoli tentacoli e divideteli in pezzi di 4-5 centimetri. Pulite le seppie eliminando il becco e tagliatele in larghe strisce.
